London Broil-8-One

1 ½ pounds flank steak, London broil or boneless sirloin, trimmed and sliced across the grain into slices about 1/8 inch. Cut these slices into 1 inch pieces.
2 Tbsp minced garlic
¾ C grated fresh ginger
4 whole scallions, ends trimmed, sliced very thinly
5 C bean sprouts, lightly rinsed and drained
2 ½ Tbsp rice wine or sake

Marinade
3 ½ Tbsp soy sauce
5 Tbsp Ale-8-One or Diet Ale 8
2 Tbsp minced garlic
1 Tbsp cornstarch

Mix all marinade ingredients and pour over beef in a mixing bowl. Cover and marinate for 3 hours in refrigerator.

Sauce
6 Tbsp soy sauce
5 Tbsp Ale-8-One or Diet Ale-8-One
1 tsp toasted sesame oil

Mix all ingredients together and set aside.

1. Heat 3 ½ Tbsp canola or corn oil in wok or large skillet until near smoking point. Remove beef from marinade and stir fry until browned (discard marinade). Remove beef, drain juices and set beef aside.
2. Clean out pan or wok and heat 2 Tbsp canola or corn oil for 20 seconds. Add garlic, ginger and scallions and stir for 20-30 seconds, until fragrant. Add bean sprouts and rice wine/sake. After 1 ½ minutes, add sauce and reserved beef.
3. Cook until heated through and evenly coated with sauce. Serve with rice and vegetable if desired.
